One variety of hibiscus, Hibiscus sabdariffa L. matures during the Christmas period and is used extensively in Jamaica to create a brilliant red drink that goes along with the colors of the holiday season.

The two panels of photos below show the progress from plant to drink. In the first we see the flower in it's traditional hibiscus shape. Next the calyx which is actually the business end. It's brilliant red. It was also formerly called, the Florida cranberry.



The next panel show the drink created by brewing the calyx.

Patty,

The leaves and calyx have been used in assorted recipes throughout the world including Florida. At one time the hope was to create a orrel jelly industry in Florida.

They have s slightly tart taste.
