Fire: Wild Boar on the spit
 
Took this last night at a Hawaiian Festival promoting local range products.

The wild boar was obviously taking a lot of heat from the charcoal fire.

That looks good enough to eat. What is the name of that Hawaiian dish that is made from fresh roasted pork. I had some at a luau on Maui when we were last there and I really enjoyed it in spite of my sunburn!

Mugmar,
The lines to sample this poor pig were the longest of all others at the festival. That included dishes such as Rocky Mountains Oysters, Loco Moco with quail egg, rack of lamb with tropical sauces I never even heard of etc. All locally raised livestock.

The dish you are thinking of is Kalua Pork. That's the one where they slow cook the pig in an "imu" (firepit) using rocks heated until they are red hot and the whole kaboodle is wrapped in "ti" leaves and covered with "ti" leaves for several hours. The taste is "ono" delicious.
