Default Secret to infinity focus w/ kit lens

Let me start by saying I am new to SLR cameras. I love taking pictures of landscapes. I know to get the best depth of field you should have a lower aperture. I also know there is a landscape mode on the rebel, but I enjoy the creative zone modes. My cameras in the past had an infinity focus. What’s the best way to do this with the rebel so that I get the sharpest all around shot. This knowledge also would have been useful over new years when I took some pictures of fireworks. It was very difficult with auto focus or manual focus. An infinity focus would have worked best. Thanks!
