The 120-300 should work fine on a 5D since it's a full-frame lens. It's corners resolving power is probably not as good as a prime 300 prime, but then this range is most useful for portraits and mostly subjects within the center of the frame so the 'peripherals' are part of the bokeh anyway so I don't think this is a big issue

The 400L is great too; However you'll still need to carry a zoom somehow - Unless you specifically target some subjects you never know when you need to recompose to capture something closer
