I had the Casio EX-S3 for around 3 years now, but after accidently leaving it in my pocket while scuba diving a couple days ago

The question I have is that I went to CompUSA today to play with the display S500, and with the one on display, it wouldn't let me take pictures back to back using no flash - it would make me wait around 10 seconds between taking photos. It didnt have a card in it, just the onboard memory so is that the reason?

No, that is not the reason. The interal memory should preform just as well as a memory card. There is a continous shot mode you can turn on under the Record menu. I believe it takes pictures at around 1.5FPS.
