I know that some of the older high-end Kodak dye-subs like the 8660 had a special b/w ribbon for grayscale printing. Are there any current dye subs on the market that offer a good solution for b/w?

Yep,

The HITI 641..........I think it's that model can't remember.

I know one of them has the monochrome ribbon/paper kit.
Slightly cheaper than the colour, but I have the HITI730ps and have printed blackand white using colour ribbon no problem at all!

I also have printed B+W on my PS730 and it is atotally great product.
