I've had the s7000 about a month and getting used to
all of the features . One thing I am wondering about is
the Finepix processing software. Most of my pics seem a
little dark. Is there a, "quick fix", function I am missing?
There seems to be no settings to adjust color, contrast, brightness, etc. I'm using Mac OS. Any help would be very much appreciated.

I am assuming your talking RAW format. The RAW software is very limited only to batch processing to tiff images. No file manipulation is available. Fuji has some software you can purchase that I believe will do what your wanting and also photoshop will do it.

I have however fould most of my images to be well exposed. You might want to check the exposure settings on your camera.

I noticed the same problem with Fuji converter LE. Some pictures slightly underexposed come out much too dark. You may want to give rawgem or s7raw a try.Both converters can adjust levelusing parameters or controls.

If you seem to be taking underexposed shots, try using the bracketing feature. It will take 3 consecutive shots: 1)overexposed 2.)underexposed 3.)normal.

You also control the under/over exposed amount: (+/- 1)( +/- 2) ...etc.

In the Fuji software, first select the thumbnail you wish to adjust.

Under "Image Utilization", click adjust image quality.

You will then see 4 tabs at the top. Click "Manual Adjust".

You will now see color, saturation, brightness, etc..
