Why do some people seem to be so concerned with how many times their shutter has been tripped?

Because that gives you an idea of how much wear is on the camera.

You have mechanical parts that wear out (shutter, mirror, switches, dials, buttons, etc.). ;-)

The shutter mechanism will probably go around 50,000 clicks on most of the entry level DSLR models (maybe a lot less, and if you're lucky a lot more). I wouldn't count on more than around 20k clicks on an entry level shutter (even though it may go for a lot longer), and I certainly wouldn't buy a used camera with that many actuations unless they were practically giving it away.

On higher end models, the shutter is designed to last longer (the Pro DSLR models may have shutters rated at up to around 200,000 actuations).
