Default Highlight Tone Prority in Canon 60D

I wish to take some street pictures where my main subject will be in the sunlight while the others will be in the shadow. All those in shadow will be quite dark while the main subject will be very bright. I would like to do some pictures like this one:


I was told by the author that for this type of picture I will need to do two things:
a. Spot Metering.
b. Put Highlight tone Prority on DISABLED.

Now I cannot find in my menu where is this "Highlight Tone Prority"....... unless I find this I cannot set it OFF.

Can you please help and show me where it is in my Canon 60D.

http://www.youtube.com/watch?v=p5BmKVxMXx0 and in that the person showed that in the menu very first item it was there but when I open the menu of my camera it dose not show there. I fail to understand this. Kindly help.

Hi you will probably find it in the custom functions, thats were it is on the t2i/550d doesn't your manual tell you
