I have the Minolta Dimage Z2 and want to take some headshots of them outdoors. What is the best settings to use?

A lot depends on the time of day and the lighting conditions. In general, try using the largest aperture and a fair amount of zoom. This should provide some separation of the subject from background. If the sun is out and high in the sky, using flash as fill light may also be a good idea.
