Default Epson 3200 or 3200 PRO?

The only difference between these two packagees seems to be four software programs and $200. If you already have Adobe 7.0, are you buying something that you already have?

Also, could one expect a better quality image on a slide than our old HP Photosmart with a SCSI card?

Your correct the only difference is the software.
On the question of HP photosmart, the difference in DPI will tell you that.

I also have the hp photosmart s20, the usb version, it scans at a max of 2400dpi and a dmax they won't tell you but is supposedly around 3.0.

I have the 3200's little brother the 3170 and it does 3200dpi at a dmax of 3.4.

I have done some comparisons and the epsons output looks better than the hp, but the epson is slower. But then again you can put in 4 slides or 2 strips of 6 images and go away for a while
Some day I'll have to time a single slide to see how long it really takes.
