I bought some 8x10 photo paper and I find I'm not using it very fast at all. I've put the paper back in its original packaging and re-sealed it. However the sealing does have small gaps.

Should I store the paper in a ziploc bag in addition to the original packaging, or should I not worry?

You should be OK without the zip lock bag. I have several selections of paper open and all I do is keepthem in the original box (or plastic bag) laying flat in a cool, dark location (called a drawer in the credenza behind the computer desk!) You're trying to avoid any curling and exposure to heat.
