When buying accessories for the Kodak DCS 760 Pro, I find a lot of adverts stating lenses, flasguns and various other bits and peices, to be compatible with Nikon D70 D50 D1 D2h D2x D100, being as the Kodak DCS 760 is based on a Nikon F5 body, would this mean that whatever is compatible with the list above can also be used on the Kodak DCS 760 Pro?

Pretty much, yes. Except none of the 35mm film that is compatible with the Nikon F5 will work with your DCS-760. Also, none of the interchangeable backs.
