Default Camera for the People! Advice by the People!

People, People, People! I will be photographing people for a book I am writing. I want a digital camera that takes lots of pictures and fast (no shutter lag). I want to do both B/W and color, capture even skin tones, have a camera that's easy to use, and NO RED-EYE :evil: , I also would consider taking little movies on this camera but not essential if it means there's a better camera without that feature.

Red eye comes from the flash being too close to the lens axis. If you can use an off camera flash chances of that happening are almost negligeable. Also red eye pre-flash helps reduce this annoyance in cameras with built-in flash or w/o hot shoe for external flashes.

Fuji's Finepix cameras are famous for accurate representation of skin-tones. I don't know what your budget is, but check out the Fuji S7000. It has a hot-shoe for off-camera flash so you can avoid red-eye, it can take movies in 640x480 for as much room as you have on your card, the shutter lag time is .2s, and it has good low-light performance.
