What is a good meter mode to use in and outdoors?

If you want a scene where everything is exposed as best as possible, use Evaulative Metering.

For properly exposing something in the center of the viewfinder, use Partial Metering.

For priority on metering the center of the viewfinder (with the rest of the scene averaged) use Center-Weighted metering.

The manual explains this as well.
