I'll be taking some evening reception photos with low light but want some of that ambient light to come through. Any and all suggestions would be greatly appreciated.

I'd meter for the ambient light. For example set to P and see what aperture and shutter speed combination you get. Put the camera to M and usethese values or shift the shutter and apperture values to give a faster speed/larger aperture or smaller apperture/slower shutter. You can also make a shift in the shutter or apperture to let in more or less light. Now switch on the strobe. If the shutter speed is less than 1/500 the camera should use the the speed you've set.
