Default ZS40: why can't I have my cake and eat it too?

I want to be able to custom set all three on my ZS40 - aperture, shutter speed and ISO, but it seems I can only do A&ISO or SS&ISO but not all three. I've never needed custom settings until now, but I'll be traveling to the arctic in a couple of months and want to get some good shots of the Northern Lights. The manual says my camera is fully customizable, but I haven't been able to figure it out. Can anyone help?

According to the specs, it has Manual Exposure mode, where you would have to set all three.

My ZS40 has Manual mode. It would be a little odd of yours didn't.
