I have a small airplane that I can take photos from. Anyone have ideas on what settings to use with my FZ15?Thanks!

F2.8 in aperture priority will give you the fastest shutter. Manual focus if you are shooting through the window – probably best even if you aren't. I would use mode 2 stabilization.

You want to pan with the ground motion unless you are fairly high. Don't allow any direct connection between the camera and the plane. Your body is the best vibration damper on the plane, so hold the camera clear.

If you don't want to post process I have found a skylight filter helps from getting too much blue in higher altitude shots.
