I'm just starting to do some panoramas and was wondering if it is possible to stitch both horizontally and vertically at the same time with any of the stitching programs.

The easiest is probably Autostitch, which is free in beta form. The best is probably Panorama Tools which is also free but you have to buy an inexpensive GUI to make it easily workable.

I find the hard part taking the pictures for stitching both vertically and horizontally. I don't use a tripod for stitching in one direction, but it is hard to get everything perfectly level without one for stitching in both directions.

Yes Autostitch is free but does not need any other program bought or free to make it work. I use it and thinks it great!

Panorama Tools can be used with the following FREE software and GUI's:

Autopano-sift, Hugin, and Enblend:
