The File > Print to > File Page Definition setup box is asking whether I want to format files for Printer or Monitor/Web. I want to correctly format my files for a printing service. Would "Printer" be my choice here?

Yes. The mail thing that monitor/web does is convert everything to sRGB color space. You probably don't want to do that if you are making files for a printing service.

I think I understand it.

So if "Monitor/Web" is selected, color space defaults to sRGB. "Printer" allows me to specify the output color space. If I want, for example, Adobe RGB, then I need to set that in the Job Properties > Prtr ICC dropdown. Normally only Printer ICC's are made available, but if I tell Qimage Show Profiles of Type: All, (or press the Utility Profiles button) I can load generic color space profiles, like Adobe, or sGB.

Qimage embeds the "Prtr ICC" color space information into the file when the file is output. Does it also embed the sRGB color space information when "Monitor/Web" is selected, or is that assumed?
