If I take a 7 megapixel photo and crop it to 2 megapixels of resolution, how many times optical zoom would that be equivalent to (When zooming using a 2 MP cam)?

Your 2Mp crop from a 7Mp image would be a little less than 2X zoom. Cropping 2Mp from an 8Mp image would be equivalent to a 2X digital zoom. Or said another way, a 2Mp camera at 2X optical would give the same shot in pixels as an 8Mp camera at 1X cropped to the same scene. That is assuming that 1X is the same on both cameras.
