Default "Hold" white balance - how to use

I have a Sony Cybershot P5 and need some help with the "hold" white balance option.

How does it work? If I point it at something white, an move the menu option to "hold" does the camera then stay with this as the white balance?

The reason I ask is for underwater photos - I would like to be able to set the white balance at depth (where there is little red) by pointing it at something white (e.g. a dive slate) and setting the balance - I then want it to stay there until I change it again.

Am I on the right track with this?

Any help appreciated.
