I'm curious what these flying men do as I've not heard of them before. Currently I see a Mexican walking man with a rope LOL.

OK I get your point LOL. It would of been nice of me to at least explain. These so called flying men climb to the top of a 55 foot pole and perform. The one gentleman stands atop of said pole and does his dance with a small flute like instrument. Towards the end of the perfomance the four men on the outside release fall backwards rotating around the pole slowly beeing lowered to the bottom. A picture tells a million words except in this case , I should have added a few more words or pictures. :-)

VexedViking gave a good description of what they do during the activity. The reasons behind the act are the following:

1) The 4 men are placed to represent the 4 cardinal directions on the Earth
2) They spin in what is an ancient fertility worship rite, one that effectively 'requests' their gods of fertility/crops to bless the coming spring harvest.

You can see this rite in the Lonely Planet: Destination Mexico video, IIRC.
