Upon further reflection, I think the stabilized Canon 55-250 might be the best choice. Most of what you say you want to do will probably be outdoors and in good light, but during some of your travels through Costa Rica, you may want to use a longer focal length in lower light, and the 55-250's IS would help with that.

The canon 55-250 IS is also a light lens, and make for a bit better travel companion also.
