Default Need a camera for a technologically impaired friend

I have a friend who is going on a cruise to Alaska in the spring of 2011. She wants to buy a point and shoot camera, but needs one that is simple to operate. Going on my experience, I told her that many of the really small pocket sized point and shoot cameras are great for taking photos of people up close, but there just aren't enough glass elements in the lens for many of them to give you outstanding picture quality for scenery or mountain ranges, etc.
I have already convinced her to not buy a pocket sized point and shoot, but she wouldn't want to lug around a DSLR either. I have a Nikon D300 that I absolutely love, but it would be a waste for her, as she would never ever take it out of "Programmed" mode. There has to be a compromise somewhere, that will shoot good "people pictures" but also take decent scenery shots.

Any input or suggestions would be sincerely appreciated.
