I have a Rebel XT and have always had the color space option at default ... sRGB. I use Photoshop Elements to tweak images and print with a PIXMA 9000.

What is the difference between sRGB and Adobe RGB?

Adobe RGB has a wider range of color. However you should know that not all software can handle it. And It may be harder to get your prints to match what you see on your monitor useing it.

Typically if you are printing your images on your own printer set your camera to Adobe RGB. If you send your pictures out to be printed somewhere set it to sRGB. You should calibrate your monitor either way though, and use the correct paper profiles for your printer. Most paper companies have their proflies on their websites for different printers.
