2 of my 3 Sandisk memory cards have now crashed in my 30D. I was lucky the Rescue Pro software saved my pictures. Could it be two defective chips or is it the camera?

When was the last time you reformated the cards?

I usually format the cards after I copy all the files to the computer.

Are you sure the camera was turned off when you removed the cards? And are you formating them in camera or from your computer?I think it would be pretty rare to have two bad cards, but I suppose anything could happen.
