What settings should i use to get the best video quality while shooting in 720p 60fps?

I use the T2i for video on occasion. There are few settings we can adjust. Of primary importance is the exposure, auto or manual. In manual, ISO remains automatic and the aperture runs full open, but the shutter speed can be adjusted up to the fps for the video capture, i.e. as low as 1/60 for 60fps, or as fast as 1/4000s.

The bigger trick is making use of the mov format video files. Pinnacle Studio works with 720p straight off the camera, but 1080p requires conversion first.
