Default Black & White ?

Being new to my 10D, I would like to take some pictures in black & white. I have looked thru the owners manual and don't see how. Can it be done? If not can I use PhotoShop Elements with out losing quality?

For making BW with Adobe - take a look at my website under Photoshop. These methods can be used with Elements too.

You might want to check out Nik ColorFX. It has a really cool B&W conversion filter in there that works great.

Klaus's method is great too though.
