Whenever I try to take pictures with Digital Rebel (300D) 18-55MM kit lens on manual focus, they always seem to come out not in focus despite appearing in focus in the viewfinder. Could the in-focus image be a trick because of my glasses? I've tried taking pictures without glasses, but the diopter on the VF doesn't go high enough to give me an in-focus viewfinder. Anyone else have problems like this?

Check that the diopter wheel to the upper right of the viewfinder is set to the middle point (meaning no correction). You may have it turned a little off center making it impossible to focus accurately.

Oops - sorry. I didn't read your post closely enough to see that you already checked it. Maybe try changing the diopter a few steps one direction and refocusing and taking a photo. Repeat in the opposite direction and then compare the photos with one taken in the center setting. Hopefully one direction or another will be better focused and will give you a clue to what setting you should have it on all the time. You'll have to narrow it down and take notes to see if one photo looks best... Tedious but cheap with digital!
