One of the big differences between the 1D MkII and the 20D is that it will AF at smaller apertures. This is of course relevant for using telephoto lenses with teleconverters.

The 20D will not AF unless the lens reports that the aperture is 5.6 or faster.

The 1D Mk II will AF at f8 or faster, which is nice because you can put a 1.4TC on the 100-400 L and still get AF.

I've had a peek around and can't find what is the case for the 5D - does anyone know?

From what I have read about the 5D, it will only AF with lenses faster than f5.6. This is a pity, because as you say, the professional cameras (1V, 1D etc) will AF with lenses of only f8. The 5D will thereforeAF withf4 lenses (400 DO, 500, 600 etc),together with the 1.4x extender, but not with the 2x extender.

I think I will upgrade my printer and possibly add some lenses before I buy the next body.

Not all manufacturers have the same philosophy...

The Minolta D7 for one, can AF with the only autofocus 500mm f/8 mirror lens in existence at quite a reasonable price. This camera can also enable full-time manual AF overide (Direct Manual Focus) with all existing lenses without using USM... all with 'IS' built-in to the body of course.
