But I don't have it with me. Does anyone know offhand if I did this correctly...

Custom Functions Menu > Allow Expanded ISO

Then...in ISO, one dial turn past 1600 it reads "H"

Does this mean its on 3200??? Seems convoluted to me.

Not exactly convoluted.

Canon made it a custom option you have to specifically activate because at ISO 3200 the image is getting quite noisy.
Same with calling it H instead of 3200, you know you are selecting a (High) speed above the normal acceptable operating levels.

NeatImage, NoiseNinja etc., are really needed at these extreme ISO levels, but still they do work quite acceptably.
