I have the following:

Canon 20D, Canon 18-55mm kit lens, Canon 50mm f1.8 lens, Tamron 28-75mm f2.8 lens, Sigma 70-200mm f2.8 EX HSM lens. I just purchased a Tamron SP AF1.4x TC to give me more reach for mylenses, which is due to arrive today. I would like to just bring along 1 lens and the TC when I go shooting. Since the Tamron works with just about any lens, I thought this would work great with all my lenses. I read though that the Sigma TC is best to use with the Sigma 70-200mm lens. Have I made too much of a sacrifice in terms of convenience vs photo quality? And is my assumption correct, that the Tamron TC will work with all my lenses?

The 1.4xSP will work excellent with your 70-200EX. I wouldn't use the TC w/ any of your other lenses though. Stop down 1 or 2 with your 70-200 + 1.4x and you will get excellent images.
