:-) My thought is go for the matched Sigma 2x ex TC :-)
The matched TC's will always outperform the generic ones.:idea:

You should be able to find it for around 260$us, quite a bit less that the Canon version.

Interestingly, with the Phoenix 2X my EXIF recorded only F3.5, while I got F5.6 with the 2 1.4X extenders. Also, EXIF showed only 420mm for the 2 1.4X extenders and only 300mm for the Phoenix 2X.

Your results are standard and expected:!:
In the first case for some generic teleconverters that do not inform the camera of their presence at all or sends the wrong information.
This would mess up the resultant focal length as well as the wrong aperture.

Expected in the second case as well, as the camera is only told of the presence of the closest teleconverter.
The teleconverter passes along its information and the lens attached, but it does not factor in another TC if it is present.
So again using 2 TC's you get the wrong resultant focal length as well as the wrong aperture.
