Default Good landscape settings

What are the best settings to use on a Canon S230 for taking landscape shots?

Also sometimes I find myself at concerts where you aren't supposed to have a camera (don't tell anyone ) and I want to take good pictures of the people on stage. The problem is if I turn off the flash, the shutter stays open forever and of course everything becomes blurred. The flash doesn't help at all anyways because the stage is too far away. What I was wondering how to do is change the settings to the equivalent of the flash going off, but without it going off. The reason I want to do this is because the flash draws a lot of attention to me and I don't want to get my camera taken away by security. Thank in advance for your replies.
