Do Nickel Metal Hydride batteries have a memory to them, or can I charge them whenever I want? I'm using them in an externalflash and don't know if I can plug them in before they go dead or not?

NiMH batteries should be run through a few full discharge/charge cycles when first acquired. Once "seasoned" they shouldn't experience the "memory" problem associated with NiCds and can be recharged as desired.
