I believe the Canon S3 (and I assume the S2) can be set to take a series of photos (up to 100 ?) at 1-60min intervals.
I do not know if you have to preset the focus or if the camera simply focuses on whatever is in the centre of the frame at the time of shooting. You can also control it remotely via a usb cable and acomputer.. Downloadable manuals. |

My Kodak P850 has a mode where it can take 2-99 pictures with 10 second to 60 minute intervals. That sounds like what you're looking for.
