Default Colour Seperation Overlay possible?

I'm working on a project for my kids' school so that we can do "funny fotos" for the school fete. We want to be able to take photos of people against the tradtitional blue/green backdrop and digitally place them suspended in mid-air etc. I use a Canon PS G1, but can probably borrow a variety of different bits of kit.

The ideal solution is to have a camera hooked up to and controlled from a PC. Victim stands in front of screen and can see in reali(ish) time the picture of themselves on their chosen background (so they can position themselves) on a monitor/TV. When ready, PC operator takes a higer resolution (still only need semi-decent 6x4, but the bigger the better) picture and prints it out.

Possible variations I've already considered are:
2 cameras (mounted close together) - 1 for real-time (eg webcam) and 1 for final picture.
more PCs (e.g one per camera + one for post-processing & printing).

Biggest problem is finding S/W to do the green screen (both real-time and final still), so I'd be very grateful for any help anyone can offer on this topic or on any other aspect.
