is there any reason i shouldn't choose highMAT? when i choose highMAT it tells me i will loose some data. is that just exif type information such as date, shooting infoetc? is the quality of the photo affected?

I think that highMAT is a compression scheme to pack more data on a CD. It is possible that this comression could lose some info, but I haven't noticed on anything I have burned.

If you are backing up pictures, and may have a need to read the discs on another machine, I would guess that ISO standard is your best bet.
