Default Camera Hacking

Does anyone know how to hack your camera to override features to allow longer exposure times or save in RAW instead of just JPEG? I know this is possible with certain Canon cameras as well as a few other brands. Id like to be able to hack my Fuji S700. If these things can be achieved by hacking, then why arent they available by the manufacturer in the first place? And finally why would they put a limit to exposure times? I can understand a limit to the fastest time, but longer times should not be a problem.
