I tried moving the camera but PSE didn't handle the results well. I believe someone mentioned different software that could handle it.

Yes, the old PhotoStitch program that comes with Canon printers, copiers, digicams. It has one stitching mode particularly for images shot in parallel sections. Just google Canon PhotoStitch and you'll find free downloads. The free AutoStitch program may work this way too (and possibly better!) but I haven't tried parallel-stitching with AutoStitch yet.
