Default Making prints in 3:2

I shot all my pictures from my previous trip in 3:2 (highest resolution: 2560 x 1920) so I would be able to make 4 x 6" prints easier without anything getting cut off. Now I've decided to make an 8 x 10" of one, if I make an 8 x 10" in 3:2 will it have anything cut off or any extra borders?

Yes, there will be some cropping off of the side borders because the 8x10 prints have a more square aspect ratio than 4x6's do. Even if you had shot your pictures in a 4:3 aspect ratio you'd still need to crop the sides off to print 8x10.
