Agree with polorizing filter, and in post processing I would rmove the white spots in all the green areas..

Yup, underexposing is the way to go. that way you can selectively bring out the highlights without blowing them out. once you blow something out you can't get it back.
Composition wise, I would be careful about cutting off the turtle's butt, he might not like that :lol: .
