I take a ton of pictures of people, That is what I do, But I take a ton, and only a few are worth while as someone always has their eyes closed etc... any tips? how can I get better odds at knowing when their eyes are open? and getting the shot?

Ask people to keep their eyes open, and take the shot quickly.

If these pictures are taken under "field conditions", ie., of strangers in public that you can't ask to "watch the birdy", try setting your camera to whatever burst mode that it might have so that it takes more than one shot when you press the shutter release. That will give you a bit better chance of getting a shot where someone isn't picking their nose or on the downside of a blink.
