So I dont understand it but when the white balance is adjusted on both cameras using a white piece of inkjet paper under the same lighting, my old nikon coolpix 2500 takes better color pictures then the new Sony DCS-H1.

How can this be? This really ticks me off as I need accurate color reproduction because I take pictures of aquarium corals that I trade with other hobbyist and they need to see that the picture is going to acurately represent the coral that they are getting. I can post some examples.

Every manufacturer sets their cameras to process an image a little differently. It sounds like you like the tone curves that Nikon used better than the defaults on your Sony. You should be able to adjust, within certain limits, how the Sony processes an image by going into the menu and choosing your own settings for such things as contrast, brightness and saturation. Playing with these things might get you results that are closer to what you want. After you have done all that you can in-camera, any further color tweaking will have to be done in an image editor.

Okay I tried adjusting the saturation, white balance, contrast no effect on the color still way off! I dont think I could even hope to correct this in photoshop really.
