When I use the edge of the scanning glass area to square up the photos I scan, the scanned image ends up having the edge cut off by about 1/8 - 1/4 inch.

So far as I know, this is normal — I've had several Epson scanners over the last couple of decades and all have done the same thing, including my current 4990 Photo

I think most other brands also have this 'feature'.

I use a narrow strip of thin card for edge alignment when required.
