Default Diamge 7 long exposures?

On a recent trip to Costa Rica, I left my manual behind and couldn't figure out how to do exposures over 4 seconds (I was shooting a small volcanic eruption at night). Are exposures over 4 seconds even possible with this camera?

It is possible to go over 4s, but you have to switch over to the bulb setting:

The camera 1st take a picture as long as you hold the shutter release down, then it takes a second picture with the shutter close for the same amount of time to subtrart the dark current noise, and voila you got your shot! (Someone report a limit of 30s max in previous posting for the bulb mode)

I didn't know for the D7, undocumented specifications?

Yes, this is common for all D7s.

I don't know about other cameras, but if they use the same CCD, the vendor application note, or devices drivers will usually include it as part of the design notes which camera manufacturers can follow (or ignore). Are you aware of this:
