What is a good shutter speed to do this with? I have been playing around with it a bit but no real good results.

If youre taking a poll put me down for #1 also. I like the texture between the water and the foreground. In fact the foreground looks like it was pasted in over the water. Really good exposure and focus.

I love #1 the most and #3 somehow reminds me of a brush. LOVE the texture on the stream on the third, somehow it feels abstract also
