It's tufa. Chemical rock caused by precipitation from a lake saturated with minerals.

neat shots, Walter... Mono Lake is on my bucket list, maybe one of these days i'll be able to make it down there for a photo shoot...

You really should make it a point to go. There's nothing like it. And, while you are so close (10-15 miles) you should visit Mammoth Lakes, see the Devil's Postpile and some of the beautiful lakes in the area.
