I've had my Canon S3 IS for months now and love it, but I'm still using the original 16MB SD card that came with it. Is the buffer on the Canon limited? I use the camera for movies and continous shooting, so if the buffer is limited the Sandisk III card would be useless compared with the Sandisk II card. Same when comparing the Sandisk I & II, but I don't believe the cameras buffer is limited to only the Sandisk I card.

It's alittle hard to describe what I'm wanting to know, but I'm sure someone can answer my question. Thanks!

What you really need to do is go to the Canon forums or Canon directly and find out whether your camera supports the additional speed of the Extreme III. Some manufacturers (Olympus for one) have provided firmware upgrades that allow cameras to support the faster writing speeds of new cards, but I don't know whether Canon does that.
